CSA Share Notes – Apr. 2, 2026

Welcome to your final winter CSA box! We hope you’ve loved the winter abundance our garden was able to provide for you. Enjoy. If you’ve registered for future seasons with us, more will be on the way to you soon!

Your vegetable line-up:

  • Beets — These are gorgeous this time of year, with no pest damage, and the prettiest, most nutritious leaves! We made our great beet spread for friends this week, and they simply raved. It’s a great appetizer to bring to your next potluck. The magenta color is really striking and it’s truly delicious!

  • Carrots — so sweet and crunchy. Over-wintered carrots are the absolute best! I hope you REALLY savor these, as they are not easy to grow, and this is the most delicious time of year for carrots in our climate.

  • Lettuce — Lots to enjoy all week!

  • Spinach — loads! Plenty for salads and also for sauteeing. Make some delicious spinach enchiladas, or a fantastic spring fritatta!

  • Sweet Potatoes — from our friend and neighboring farmer, Tony Philips, best sweet potato grower in these parts. They’re not certified organic, but these tasty roots are free of any chemical sprays, so no need to worry!

Veggie Storage tips:

  • Everything wants to be washed well before cooking, but keep the dirt on till then, to prevent faster spoilage.

  • Sweet potatoes store best at room temp.

  • Roots like beets and carrots want to be kept sealed up in the fridge, high moisture, cold temperature. They’ll stay nice and crisp if you sever the tops from the roots, but keep the tops, because they’re delicious too!

  • All leafy greens want to be in your fridge. Seal them up in a bag or container to retain moisture for longest storage life. If your bagged greens have any standing water in them, drain that excess water out to prevent spoilage.
